Oatmeal Cookies
Add & cream together:
1 cup (230 g) butter
1 cup brown sugar
1 cup sugar
Add & mix:
2 eggs
1 tsp vanilla
Add & mix:
1 ½ cup flour
1 tsp. salt
1 tsp bicarbonate (baking) soda
3 cups quick oats
Put by teaspoonful 2 inches apart on non-greased cookie sheet.
Bake 177 degrees Celsius, 350 degrees Fahrenheit for 8-10
minutes.
Let cool for a few minutes before transferring to cooling rack.
Snickerdoodles
Cream together:
1 cup (230 g) butter
1 ½ cups sugar
Add: 2 eggs (which have been beaten with a fork)
Mix together.
Add:
2 ¾ cups flour
2 teaspoons cream of tarter
1 tsp bicarbonate (baking) soda
¼ teaspoon salt
Blend well.
In a separate small bowl mix:
2 Tablespoons sugar
2 teaspoons cinnamon
Form cookie dough into 1-inch balls. Roll in sugar/cinnamon
mixture in bowl.
Place 2 inches apart on non-greased baking sheet (use of baking
paper helps ease re-use of baking sheet and cleaning)
Bake at 188 degrees Celsius or 400 degrees Fahrenheit for
8-10 minutes.
Let cool for a few minutes before transferring to cooling
rack.
Makes 6 dozen.
No Bake Cookies
Put in medium pot:
4 Tablespoons butter
2 cups sugar
½ cup milk
¼ cup cocoa
Cook on medium until mixture comes to a boil, stirring.
Remove from heat.
After 1 minute add:
1 teaspoon vanilla
½ cup peanut butter
Pinch of salt
3 cups oatmeal
Mix thoroughly.
Spoon or make small 1” balls and place on a
piece of wax paper on counter to cool.
Makes about 6 dozen cookies
Monster Cookies
Cream together:
2 2/3 cup brown sugar
2 cups sugar
1 cup (230 g) butter
Add:
6 eggs
3 cups peanut butter
1 ½ teaspoon vanilla
1 ½ teaspoon corn syrup (or Golden Syrup)
4 teaspoons bicarbonate (baking) soda
9 cups oats
Mix together.
Can add: raisins, dried cranberries, chocolate chips,
M&Ms, chopped dates, nuts, etc.
Put teaspoonful of cookie dough 1 inch apart on lightly greased
cookie sheet.
Flatten slightly.
Bake at 177 degrees Celsius, 350 degrees Fahrenheit for 8-10
minutes.
Let cool a few minutes before transferring to cooling rack.
